What would Christmas be without treats? Treats are a big part of Christmas. It's also nice to try new flavours and recipes alongside traditional treats.
Here's a recipe for a Christmas treat that's perfect for dessert on Christmas Eve or for brunch on Christmas Day. You can adapt the recipe to suit you, for example by using vegetable-based whipping cream instead of cream and artificial sweeteners such as stevia instead of sugar. If you prefer, you can leave out the additional sweetener altogether, as the ingredients in the recipe are already sweet in themselves.
Christmas money treat
Using the amounts in the instructions, you will get about 4 servings, depending on the size of the serving dish.
6 gingerbread cookies
2 dl whipped cream
200 g flavoured curd, e.g. plum and cinnamon or gingerbread
(0,25 dl sugar)
1 teaspoon vanilla sugar
1 dl frozen cranberries
1 dl quince sauce
You can make the treat either in a glass or in a dessert bowl.
Crush the gingerbread into small crumbs and divide the gingerbread crumbs evenly into the bottom of the dessert bowls.
Whip the cold whipping cream and sugars into a froth. You can also omit the sugar altogether or use another sweetener.
Add the curd to the whipped cream, gently lifting and turning.
Pour the cream and curd mixture into bowls over the peppercorns so that the crumbs are covered.
Pour the quince sauce into a mug, for example, and heat it in the microwave for about ten seconds. The quince should be slightly warm, not hot.
Finish the dishes with chewy cranberries and warm caramel sauce. Serve immediately.
You can also prepare the dishes in the fridge a few hours in advance and finish them just before serving.
